Apple Sharlotka

This is a recipe adapted from SmittenKitchen.com. I changed the type of apples used, as well as cut down the sugar significantly. From what I read, this is a cultural recipe- hopefully my changes to it don’t make it an abomination!
Ingredients
  • 6 large, sweet apples
  • 3 large eggs
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ½ teaspoon cinnamon
  • Cinnamon and/or powdered sugar for sprinkling
Instructions
  1. Preheat oven to 350 degrees. Grease or spray a 9” springform pan. Prepare your apples by coring them and slicing them. I used the food processor to slice mine up evenly. Place the sliced apples in the springform pan.
  2. Combine eggs with sugar, then add in flour, cinnamon and vanilla.
  3. Spread the batter over the top of the apples in the pan.
  4. Bake for 55 to 60 minutes, or until toothpick stuck in center comes out clean.
  5. Let cook for 10 minutes on rack. Remove sides of springform pan, sprinkle with cinnamon and powdered sugar if desired, and serve warm or cooled.
