This is a recipe adapted from SmittenKitchen.com. I changed the type of apples used, as well as cut down the sugar significantly. From what I read, this is a cultural recipe- hopefully my changes to it don’t make it an abomination!
Ingredients
- 6 large, sweet apples
- 3 large eggs
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- ½ teaspoon cinnamon
- Cinnamon and/or powdered sugar for sprinkling
Instructions
- Preheat oven to 350 degrees. Grease or spray a 9” springform pan. Prepare your apples by coring them and slicing them. I used the food processor to slice mine up evenly. Place the sliced apples in the springform pan.
- Combine eggs with sugar, then add in flour, cinnamon and vanilla.
- Spread the batter over the top of the apples in the pan.
- Bake for 55 to 60 minutes, or until toothpick stuck in center comes out clean.
- Let cook for 10 minutes on rack. Remove sides of springform pan, sprinkle with cinnamon and powdered sugar if desired, and serve warm or cooled.
