The scale was kind again today, dropping me down another pound since yesterday- that’s two pounds since Sunday’s official weigh in. Hopefully its not just wiggle and it’ll stick. Breakfast was the leftover shepherd’s pie I made last night, which was tasty, and a long, leisurely cup of coffee which I sipped on for most of the day. I took a long hot soak in the tub, and made a mental note to buy shampoo and conditioner soon.
Dinner tonight was Roasted Garlic Chicken with Onions, or at least that was the recipe my number generator picked and it was the one I pulled out. I didn’t roast anything though. I cut up my chicken into small pieces. I chopped an onion. I cut up several cloves of garlic. Sprinkled liberally with thyme. Threw it all into a pan with some olive oil, and let it cook about halfway through. Dumped in a can of fat-free chicken broth, a little flour, and let it simmer and cook down. Made 2 cups of brown rice. Made salads. Everything turned out fine except my sauce- it never thickened up, so I just dumped some slightly thicker then water broth over everything when I served it.
The other day, I skipped my B-12. I’ve been taking it for about a week now I think. All day I felt sluggish and just low. It was weird hat a difference it makes and I didn’t even notice until I skipped it by accident! Going to try hard not to let that happen again. Wow!
I spent an hour tinkering with the links page, but really didn’t find a solution to the slow loading issue, which I think is caused by the plug-in having to access all of those RSS feeds before it can post to the page. Unfortunately I think the only real solution is to cut down the number of feeds being pulled on the page. I also decided to make icons for the categories, and coded that into the footer. Some of the icons I want to change, but they’ll do for now. Yes, this is what you have to look forward to in reading the blog of a designer- things change and they are always being improved. I drive myself crazy like this constantly… lol.

I did good once that shepherd’s pie was out of the way. Dessert was raisins. I love raisins.
Tomorrow I’m planning on a much lighter start to the day, so should be under the limit easily at the end. That yummy baked oatmeal recipe I found perhaps?






















it is hard to keep your points low and make homemade gravy. you might want to consider gravy in a jar, they have light gravy and fat free.

The gravy/sauce was basically just fat-free chicken broth, the chicken leavings in the pan, and a little flour. Not much to it.
I totally suck at making real gravy, so I just buy it in a jar or can 90% of the time.
