This is what I did tonight. This beautiful loaf of bread was baked by yours truly, and I am going to be absolutely heartbroken if its not any good when I slice it up tomorrow morning. But this isn’t all I did today. I made homemade chocolate chip granola bars. I baked my three squashes. I made us a taco pie for dinner. Then I baked this loaf of bread which almost didn’t get made. I literally used every last bit of flour I had in this baby, and will have to get more when I go to the store on Monday. It didn’t rise as well as I would have liked, but its so damned cold in the house I had to heat the oven to 200° and then turn it off to give it a war environment to do so in. It kind of works. =] Anyway, tomorrow I’ll be slicing it up and maybe making French toast. Mmm! French toast with homemade bread!
Food was good today. Fat was high, but I stayed within my calorie goals, and I feel like I splurged a bit with the last bread stick with breakfast, and the granola bar I sampled after I made them. (The granola bar recipe is already posted on the cooking part of the blog if you’re curious!) Other than that, everything was the regular stuff. Tomorrow night we are trying a new recipe- an asparagus and what was supposed to be chevre pasta, but I couldn’t find goat cheese anywhere this week so using feta instead. We’ll also be having chicken breasts to go along with it.
I did some shopping this afternoon as well, and picked up about 6 pounds of pork for $0.98 a pound at Food4Less, where the cashier asked me where I’ve been shopping as he hasn’t seen me lately. I was forced to admit I’ve been frequenting Winco lately instead, but would always come back here when I needed pork!
I had some repayments for my Kiva loans come in as well, so I was able to make my first loan of the year, putting me at 20% of the way to my goal of making 5 loans this year. Sweet! :woot:
Not much else to report, so here’s today’s food diary.

Here’s to hoping tomorrow is equally on track with calories as today and yesterday were and I can keep this going all week!

Your bread looks great, You Baking Woman!! Let us know how it tasted. Send me some.
Question. What if you wanted to take your repaid loan money out entirely cause you needed it yourself? Could you do that? I keep saying I am going to loan money then I forget.
How come it is so cold there? It is supposed to be hot all the time there. :D

It turned out really well Donna. I made French toast with some of it this morning. I may be freezing some of it for later as I doubt we’ll eat it all before it goes bad.
Yup, you can withdraw the money you put into Kiva after its been paid back. I’ve never done it so can’t give you details, just what they say. :)
I actually just made my first loan of the year yesterday. I’ve got 4 more to go this year to meet my goal.
