There was no real change this week form last week, but I’m actually happy about it because I ate really badly last week and I was fully expecting a small gain when I stepped on the scale.
I did fairly good on food today, though tomorrow is going to be a challenge as we’re having mac n cheese with bacon in it for dinner. It means I need to eat lightly for the first half of the day and stay away form the carbs as much as possible. I wish I had some fruit in the house to munch on, but we’ve got nothing until Tuesday when the box comes.
And speaking of the mac n cheese, I have no idea how it’s going to turn out. I’ve made mac n cheese like ten times, doing it with different cheeses and different methods every time, and every time Mattie basically refuses to eat it because its “too sticky” and “not creamy enough”. Basically, he wants mac n cheese made with a cheese that has all the melting properties of Velveeta, but isn’t Velveeta.
I had a few people I queried suggest using gruyere cheese, and after driving to four different stores, the most exotic thing I could find was a block of blue cheese. I ended up with two wedges of some cheese I can’t remember the name of now, some goat cheese, and I have Parmesan and Mozzarella in the fridge already. Th options at all four stores were Swiss, cheddar, colby, jack, pepper jack, mozzarella, goat, feta, cream, and in one store, blue. Hopefully between the four of them I can make something work. Not really looking forward to this cooking adventure, which is sad because I love mac n cheese.
Food was pretty good today. I did use some of my weekly allowance, but not a lot of them. Reviewing this week’s dinners I made have a tough week ahead of me, but one thing at a time. My goal right now with dinner planning is to get rid of processed foods from as much of our diet as possible. I’ve phased out things like Helper meals down to only 2 or 3 times a month, and my next thing to work on is to learn how to prepare rice and pasta in interesting ways without it coming out of a box with a sodium-laden flavor packet. One thing at a time, right?
