I’m loving the scale this week. Really loving it. This is the last day of my week, and I’m down 2.5 pounds from my official weigh in on Sunday. I’m only hoping that my official weigh in tomorrow will be as good as today’s. Right now I’m a pound and a half from my next goal of losing 15 pounds, and 6 pounds from my first BMI goal of dropping 3 points off of it. I’m really looking forward to that first BMI goal!
Breakfast was more rutabaga hash with eggs, and some fried ham steak. So good! A few more points then I intended, but still delicious. Dinner was pork roast, mashed potatoes, egg noodles, and beets, which came out of our produce box last week. I hate preparing fresh beets because they stain my hands purple for a few days, but I’m thankful for my food processor, so I didn’t have to slice them myself.
After dinner, I decided to bake the apple sharlotka recipe Smitten Kitchen posted a few days ago. As soon as I saw it, I knew I had to make it- it looks so good, and after making a few slight changes to the recipe, it only has 3.4 old WW points per serving if divided 8 ways. What did I change? I used sweet apples instead of tart ones, and because of that, I cut the sugar in half. I also didn’t peel my apples. I don’t peel them when I make applesauce, and I don’t peel my potatoes when I make mashed potatoes. Maybe if I had a peeler that did it all for me… *dreams*. But hey! I got to use up almost all my apples in this recipe!
I’ll post the recipe with my changes after this post, assuming it turns out okay. Though I wrote it down below, its actually still in the oven baking.

I used more than half of my flex this week, but overall I feel I had a very successful week of eating. We had good meals, I made mostly good choices, and we had something different every night.
