I have this totally awesome mac & cheese recipe, but it makes enough to feed 6 people, and one of my problems is having leftovers around- I always eat too much. The recipe I have is also hugely expensive in Points, coming in at about 18 per serving. I made a few changes, scaled it down considerably, and while there’s not much to it, it’s damn good. You could add chicken, bacon, hot sauce, all of the above, and it would be even better.
Ingredients
- Coarse salt and freshly ground pepper
- 1 ½ cups whole wheat pasta, your choice
- 4 tablespoons non-fat evaporated milk
- 1/4 teaspoon seasoned salt
- 1/4 teaspoon garlic powder
- 1 cup mixed shredded cheese
- Paprika, for sprinkling
Instructions
- Preheat oven to 375 degrees. Grease two 2-cup oven-safe bowls or ramekins; set aside. Add pasta & salt to pot, boil until al dente.
- In a bowl, combine milk, seasoned salt, and garlic powder.
- Add drained pasta to dishes, stopping when half full. Sprinkle with ¼ cup cheese. Add the rest of the pasta to the bowls, top with another ¼ cup of cheese, and split milk mixture evenly between the two.
- Bake until top layer is lightly browned, 25 to 35 minutes. Let stand 10 to 15 minutes before serving.
