Once again, we devoured all of this sweet n sour chicken before I thought to take any pictures. All that’s left is a small mess of peppers and onions on Mattie’s plate because he picks them out. I’ve always thought stir fries were a great way to use up the random stuff in your fridge and this is no exception. The original recipe I sort of skimmed over was from the 100 Best Chicken Recipes.
Sweet n Sour Chicken Stir Fry

Quick, easy, sweet, and tangy! Serve over rice for a perfect meal! Nutritional info at the bottom is for stir fry only: it does not include rice. Adapted from 100 Best Chicken Recipes.
Ingredients
- 1 cup sweet and sour sauce
- ½ cup cashews
- 4 small peaches or 1 16 oz. can of peaches, drained
- 10 oz. chicken, cut into bite sized chunks
- 2 bell peppers, chopped
- 1 medium onion, cut into chunks
- 1 tablespoon vegetable oil
- 1 tablespoon soy sauce
- ½ teaspoon ground ginger
Instructions
- Heat oil in wok, adding chicken when hot. Cook chicken 3 to 5 minutes or until cooked through.
- Add vegetables and peaches, continue to cook until peppers and peaches are tender.
- Mix sweet n sour sauce, soy sauce, and ginger together, and add to chicken mixture.
- Cook for 5 more minutes on low heat, stirring frequently.
- Serve over rice.

You could also easily cut down the amount of sweet & sour sauce by about half I think without any problems- it was pretty saucy.
