Peanut Sauce (Lightened)

We went out to dinner to the Greenhouse Cafe on Saturday night and I had this delicious pasta dish with chicken and a peanut sauce. The only thing I didn’t care for about the dish was cilantro, which I think tastes sharp and awful. Otherwise it was wonderful. It was also very simple. The Complete Book of Sauces has a recipe for a peanut sauce that is comparable, and so simple to make.

I did make one change to it, and that was to use regular milk instead of cocoanut milk to save on calories. Its still not low-cal or low-fat because of the peanut butter, but it is delicious and a little goes a long way.Using the regular milk it does lack that Thai flavor, but its still very good.

This recipe will make enough sauce for two big plates of pasta. Add some chicken (maybe season it with soy sauce?) and you’ve got a meal!

I adapted this from the Complete Book of Sauces. Its a very rich sauce, and you really only need a little bit.
Ingredients
  • ½ cup whole milk
  • ½ cup peanut butter
  • 2 tablespoons soy sauce

Instructions
  1. Add all ingredients to a small saucepan and bring to a boil, stirring constantly.
  2. Turn heat down to low simmer and cook until mixture is slightly thickened.
  3. Toss with pasta and serve.
