I made these today with some changes from the recipe posted on For the Love of Cooking. Their version uses puffed rice cereal, where my version leaves it out. I also opted to mix in the chocolate chips, rather than jut press them into the tops. When you make these, make sure you really, really press them down into the pan hard. I pressed mine down and thought it was hard enough but it wasn’t and they didn’t really stick together. I basically ended up with chocolate chip granola bar chunks instead. They are however rather tasty. We’ll see if they pass the boyfriend test.
Why did I make these? I routinely buy 2 boxes of Quaker’s granola bars for my boyfriend’s work day breakfasts. They’re a little pricey (I think anyway) but my real reason is in learning to make more foods we buy pre-made myself. I would love to get away from all store-bought ready-made foods if it’s possible.
Anyway, here we go! Let’s make some granola bars!
- 3 cups oatmeal
- 1/3 cup brown sugar
- 1/4 cup honey
- 4 tablespoons butter
- ¾ teaspoon vanilla
- 4 tablespoons mini chocolate chips
- In a small saucepan, combine brown sugar, honey, and butter. Stir until sugar is dissolved and everything is well combined. Turn off burner and stir in vanilla.
- Pour honey mixture into oatmeal, stirring with rubber spatula until well-combined.
- Spray a baking dish with cooking spray. Pour oatmeal mixture into dish, pressing firmly into pan.
- Allow to set for at least 2 hours, or refrigerate for at least 30 minutes. Slice into 12 individual bars and wrap in plastic wrap. Keep at room temperature for up to 5 days.
You are going to get your hands sticky when you press these down into the pan. I was trying to avoid getting sticky, and didn’t press them like I should have, which is why I had the problem I did. Press the hell out of them!
