If you need to start it earlier in the day and want to leave it mostly unattended, you can do that. Just turn the heat down low and cover it, peeking in on it here and there. Just remember not to try to cook your pasta (or whatever carb you choose to use) all day long! You don&#8217;t want soggy soup!</p>

				<content:encoded><![CDATA[<p>After making the Velveeta mac n cheese the other night, I still had some Velveeta cut into chunks that I didn&#8217;t use for that recipe. I also had several small heads (I mean really tiny) of cauliflower, and I decided to boil and mash it as my side with dinner while Mattie mad mashed potatoes. He doesn&#8217;t like cauliflower, and since discover how well it can masquerade as mashed potatoes, I have been in love with it!</p>
<p>This is super easy, and all you need it cauliflower and a few small bits of Velveeta cheese. Ack! I just called Velveeta cheese! I&#8217;ll try to get photos the next time I make this. I have so many recipes here I need to update with photos- I will never become a <em>real</em> food blogger, but honestly, I don&#8217;t mind. I share my recipes in the hopes someone will enjoy them and it also gives me a nicely organized way to browse some of our favorite recipes we&#8217;ve had in the past.</p>
<p>Anyway, here&#8217;s this super quick side that you can throw together in no time. Its low carb, and overall the nutrition isn&#8217;t too bad. I hope you enjoy this one! You can always add more Velveeta to it if you&#8217;d like- feel free to experiment with it!</p>

				<content:encoded><![CDATA[<p>I want to make a statement before posting the recipe here. I despise Velveeta because in no way, shape, or form do I believe that its cheese. Unfortunately, I&#8217;ve been forced to concede because Mattie won&#8217;t eat mac n cheese if the cheese gets stringy when it melts- which happens with virtually every legitimate cheese out there. I did learn in my search for a mutually satisfying mac n cheese that its lactose that causes the cheese to become stringy when it melts, which means to make Mattie happy, we really only have three cheeses that are readily available that we can use. Velveeta, American, and chevre. Unfortunately he doesn&#8217;t like chevre, and I don&#8217;t care too much for the other two, but I decided in the spirit of compromise to just go with the Velveeta.</p>
<p>This recipe is largely how my mom makes mac n cheese, with some minor adjustments. You can also add other things to this such as chicken, hot sauce/wing sauce, pepper, or broccoli. Mac n cheese is one of those foods that are so versatile with how you can dress it up.</p>
<p>This is also a pretty unhealthy dish, which is super high in calories considering, and not the kind of calories you really need to be eating. The portions I&#8217;m giving are suitable for a somewhat generous side at dinnertime, or maybe a lunch. So, with that in mind, here&#8217;s the recipe. Sorry there&#8217;s no photos- I made this the other day with dinner and forgot to photograph it as I wasn&#8217;t expecting to share it.</p>

All that&#8217;s in it is ground beef, cream of mushroom soup, pasta, milk, and water. Salt &amp; pepper can of course be added to taste. This is also a better tasting alternative to Hamburger Help&#8217;s stroganoff flavor, there&#8217;s no mystery ingredients involved and you can control everything that goes into it.</p>
<p>My photo shows carrots as well because 1) I had them in the fridge already and they needed using, and 2) I always try to add some sort of veggie to the meal and if I can do it all in one pot even better, so feel free to slip in some veggies into this one pot-meal.</p>

				<content:encoded><![CDATA[<p>I did it again, guys! I made a super delicious meal, and I completely forgot to take photos of it until I was putting the last bite into my mouth, and a photo of an empty plate isn&#8217;t quite the same, is it?</p>
<p>Tonight&#8217;s dinner started out as a recipe on the <a href="http://www.campbellskitchen.com/" target="_blank">Campbell&#8217;s soup website</a>, but I made a few changes to it as I went. Sometimes you just know something else will taste better! The nutritional info given is if you just split the recipe into two big servings. If you served this with a side of veggies, you could easily make it go further, feeding another person or two.</p>
<p>We both really enjoyed this meal, and it will be making it into our regular meal rotation for sure! Here&#8217;s how you make the Creamy Pork Saute!</p>

<li class="instruction" itemprop="recipeInstructions">Add the pork to skillet after seasoning with thyme, and cook until outside is white, stirring often.</li>
<li class="instruction" itemprop="recipeInstructions">Add chopped celery and onion, continuing to stir often. Cook for 2 more minutes.</li>
<li class="instruction" itemprop="recipeInstructions">Stir the soup and milk into the skillet and heat to a boil. Reduce to simmer until pork is cooked through and sauce is thickened to your liking.</li>
